Stark's Bar Review

Stark's Bar on Queen Street under the Civic theatre is one those places that could be described as a hidden treasure. Despite its obvious location, it's one of those places you could walk past every day and not know that it was there. Not that this detracts from the appeal of Starks, those that have ever been associated with it know that its also going to be one of those places you're going to be able to drink in, 20 years from now. It's that kind of place.

As far as small one man, two man bars go, Stark's could quite possibly be one of the best designed. As long as there isn't a show going on in the Civic, you can always find a comfortable spot to sit yourself and enjoy the world going by on Queen Street. The staff are well-trained and professional, with service having always been courteous and efficient. Although not always available, the bar staff will often take it upon themselves to offer table service and ensure you're comfortable with both your food and drinks.

Stark's has limited wines and beers, but a wide range of spirits. It is suggested you test some of the cocktails on their list, which also reflect the diversity of the available spirits, so there should be no trouble in finding a suitable drink. The barfly also believes that the guys here make some of the best classic cocktails going, so if you're brave enough to risk a Manhattan, Dirty Martini or Old Fashioned for the first time then this is the place to try it. Stark's also specializes in Champagne cocktails and despite not being overly original they're worthy experimenting with, especially the Ginger Champagne. Such drinks also compliment the classical decor of the Civic Theatre and are not seen as pretentious choices, but as suitable considering.

The music here has always been discreet, more of a compliment to the service than trying to create any kind of niche for itself. There has been some murmuring of D.J's and some live sets, but Stark's is not a destination bar, more of a start-up or finish up bar. Having such a great location it's an ideal spot to drop into on your way up to K Rd or venturing down to High Street or the Viaduct. The barfly though recommends you get to Stark's on a Sunday afternoon or Monday night. Odd choices you may argue, but this bar has layers. Sure it might be a great bar superficially, but once you meet both the people that work here and the people that come here you'll understand why the barfly rates this bar as one of the best in the country. It's this x factor that makes Stark's that bar that you'll be drinking in 20 years from now and the envy of many a bar owner.
